The Art of Pasta Making
Since 1889

Our knowledge is a treasure passed down from generation to generation. Every gesture, every secret of the pasta-making art is preserved and perfected, allowing us to carry on a tradition that is renewed every day in our products.

1889

In a small workshop in Pescara, Pastificio Zaffiri is born. A dream of quality and passion takes shape, laying the foundation for over a century of pasta-making excellence

1968

The pasta factory moves to Sora, finding its permanent home. Here, tradition and innovation merge to give life to a new era of production

1990

Our egg pasta line is born. A tribute to the richness of Italian cuisine, where the simplicity of ingredients transforms into pure deliciousness

2023

We renew the packaging lines for short pasta, introducing the double-bottom square package

Time,
our precious ally

The true measure of our success is not in quantity, but in the quality that only time can guarantee. Slow drying at low temperature is the secret that preserves the flavor and nutritional properties of the wheat, giving our pasta that unmistakable texture and taste

extra time for pasta excellence

  • 20 to 24 hours for long pasta
  •  over 7 hours for short pasta

The taste of awareness

The choice of 100% Italian wheat is fundamental for us. Not only do we value our territory and support local farmers, but we also significantly reduce environmental impact. By using national wheat, we save up to 30% in CO2 emissions related to transport compared to using imported wheat. It's our way of contributing to a more sustainable future, bringing a genuinely Italian product to the table.

People are the beating heart of Pastificio Zaffiri. We firmly believe that excellent pasta comes from the hands and passion of those who produce it. Our pasta masters are not just operators, but true artisans who infuse value into every stage of the production process.

Food safety and quality are absolute priorities for us. In addition to strictly complying with all current regulations, we have implemented a quality control system that monitors every stage of production, from wheat selection to packaging. We regularly perform laboratory tests and have obtained international certifications such as BRC, IFS, and Kosher.
